For the 11th episode of Taste Talks Studio, I am excited to present my conversation with William Masters, professor at Tufts University and author of the recently published Textbook, Food Economics.

In this episode, we discuss what drew Professor Masters to the intersection of nutrition and economics, how international research shaped his views on why affordability is key to improving global diets, and his insights from participating in the Food Prices for Nutrition project.

Food Economics, a recently published textbook by Masters and his co-author Amelia Finaret, is an open-access resource acting as a compilation of an introduction to agricultural production, business decisions, consumer behavior, and the government policies that shape our food system. Masters discusses the process of writing the textbook, what it means to make the resource accessible for all, and what he hopes to provide for the readers.
